 The fat in coconut is rich in a type of fat called medium-chain triglycerides (MCTs ). MCTs are very easy to digest. They don’t require any extra energy to digest or absorb. They’re great for quick energy. MCTs are also helpful for people who have trouble digesting fats

Coconut muffins, Paleo, gluten-free
 
1/4 cup coconut flour ( I use Nutiva)
1/4 ts salt (I use Himalayan salt)
1/4 ts baking soda
1/2 cup berries on your choice or raisins
3 eggs

Melt coconut oil if it is solid and mix all products togther. Spoon into the greased muffin molds, filling each cup about two-thirds full. Bake for about 15 to 20 minutes.
